Sausage Balls

Note: These need no sauce! Try not to eat all of them when they come out of the oven! - this recipe brings my whole house to the kitchen so I have to double up the recipe if making an appetizer tray or there won't be any left for the party when my family is done 'testing them' ;)
Clean Swaps:

Coconut oil or ghee or MCT oil or olive oil or bacon grease or any fat can be used - I love sausage flavor so leftover bacon grease tastes the best and it makes the kitchen smell amazing while they're cooking!
Prep Time: 15 minutes to mix together and roll up the balls
Cook Time: 20 minutes
Ingredients:

1 egg

16 oz plain breakfast sausage

1 cup almond flour

8 oz shredded cheddar cheese ( I like to use medium cheddar with the parm flavor, you can play with mild cheddar flavors and spicier breakfast sausage if you prefer! I don't recommend italian for this. )

1/4 cup finely shredded or grated parmesan

1 tbsp bacon grease, coconut oil or butter (Bacon grease tastes the best!)

2 tsp baking powder

1/4 tsp salt
Instructions:

Preheat oven to 350

Take your rings off! Put all ingredients in a large mixing bowl and mix well by hand

Use your hands or a cookie scoop to roll into 20 - 30 meatball/bite sized bites (larger will be juicier but I prefer crispier on the outside so I make them a little smaller and cook a few minutes longer)

Place on a cookie sheet and bake for 16 -20 minutes depending on how crispy you'd like them - you don't need any spray with this recipe, and don't use parchment paper or the crispy cheese will stick to it - just use a spatula to flip them off of the sheet

These freeze well in a large ziploc bag, I often double the recipe and freeze half for breakfast bites at a later time.
