  • 1 box (about 15 ounces) of yellow cake mix (sugar-free or low-carb, if desired)
  • 1 can (about 15 ounces) of pumpkin puree (unsweetened)
  • 1 teaspoon pumpkin pie spice (or a mix of cinnamon and nutmeg)


  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups.

  2. In a mixing bowl, combine the yellow cake mix and pumpkin pie spice.

  3. Add the entire can of pumpkin puree to the dry mixture.

  4. Stir the ingredients together until well combined. The batter will be thick.

  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.

  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

  7. Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

  8. Once the pumpkin muffins have cooled, they are ready to enjoy!
