Keto Friendly Apple Pie

Ingredients:
For the Pie Crust:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1/4 cup granulated erythritol (or another keto-friendly sweetener)
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
- 1 large egg
For the Filling:
- 3 medium-sized chayote squash, peeled, cored, and thinly sliced
- 1/2 cup granulated erythritol (or another keto-friendly sweetener)
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, melted
Instructions:
For the Pie Crust:

In a food processor, combine the almond flour, coconut flour, granulated erythritol, and salt.

Add the cold, cubed butter to the mixture in the food processor. Pulse until the mixture resembles coarse crumbs.

Add the egg and continue to pulse until the dough comes together. If the dough is too dry, you can add a teaspoon or two of cold water.

Remove the dough from the food processor and shape it into a ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
For the Filling:

Preheat your oven to 350°F (175°C).

In a large bowl, combine the thinly sliced chayote squash, granulated erythritol, ground cinnamon, ground nutmeg, ground allspice, and salt. Toss to coat the chayote slices evenly.

Drizzle the lemon juice and melted butter over the mixture and toss again to combine.
Assembling the Pie:

Roll out the chilled pie crust dough between two sheets of parchment paper to fit a 9-inch pie dish.

Place the rolled-out crust into the pie dish and trim any excess dough.

Pour the chayote squash filling into the crust, spreading it out evenly.

If desired, use the remaining dough to create a lattice or top crust for the pie.

Bake in the preheated oven for about 45-55 minutes, or until the crust is golden brown and the filling is tender.

Allow the keto-friendly apple pie to cool before serving. You can optionally serve it with a dollop of whipped cream made with keto-friendly sweetener or a scoop of low-carb vanilla ice cream.
