Keto Friendly Pumpkin Spice Latte (PSL)


For the Pumpkin Spice Syrup:

  • 1/2 cup canned pumpkin puree (unsweetened)
  • 1/2 cup water
  • 1/4 cup granulated erythritol or another keto-friendly sweetener
  • 1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, allspice, and cloves)

For the Pumpkin Spice Latte:

  • 1 cup brewed coffee or espresso
  • 1/4 cup unsweetened almond milk or coconut milk (or any keto-friendly milk)
  • 2 tablespoons heavy cream
  • 2 tablespoons Pumpkin Spice Syrup (adjust to taste)
  • Whipped cream (unsweetened, optional)
  • Ground cinnamon or nutmeg for garnish (optional)


For the Pumpkin Spice Syrup:

  1. In a small saucepan, combine the pumpkin puree, water, granulated erythritol, and pumpkin pie spice.

  2. Whisk together over low heat until the mixture is well combined and slightly thickened. This should take about 5-7 minutes.

  3. Remove from heat and let the syrup cool. It will continue to thicken as it cools.

For the Pumpkin Spice Latte:

  1. Brew a cup of coffee or espresso using your preferred method.

  2. In a microwave-safe container or small saucepan, heat the almond milk or coconut milk until hot but not boiling.

  3. In a coffee mug, combine the brewed coffee, hot milk, heavy cream, and 2 tablespoons of the Pumpkin Spice Syrup. Adjust the syrup to your desired level of sweetness.

  4. Stir the mixture until well combined.

  5. If desired, top your keto PSL with unsweetened whipped cream and a sprinkle of ground cinnamon or nutmeg.

  6. Serve your low-carb Pumpkin Spice Latte hot and enjoy!
