Strawberry Cheesecake Cookie bites

Use Swerve or any stevia or monkfruit sweetener

Use any clean cookie, High Key is used here but even crunching up cereal like Catalina Crunch cinnamon for the crumble would be amazing in here!
Notes/fun tips: These go into the #neverleftovers category! They also barely make it to the party as everyone tries to eat them when they walk past by these delicious finger foods.
Prep Time: 5 - 10 min
Ingredients:

Fresh strawberries 1 pt.

cream cheese 4- 8 oz.

Swerve or a natural sweetener with monkfruit, stevia or erythritol and allulose 2 tsp.

Vanilla extract 1 tsp.

High Key chocolate chip cookies crumbled or another low carb cookie like Perfect Keto works great!
Instructions:

Slice leaves off the strawberries and use a pairing knife to either hollow out the core or slice into wedges and cut out the center for the cream cheese to sit in.

Mix 4 - 8 oz of cream cheese ( room temp mixes better ) with Swerve and vanilla extract, put into a ziploc bag and cut the tip to pipe into the strawberries
