Watermelon, Feta & Mint Salad

Great summer salad! Food pairings like this (cheese with fruit) can really help to blunt sugar spikes
Time Savings:

Buy feta crumbles or buy a chunk and dry with a paper towel and crumble into a bowl/

Buy pre-sliced watermelon and then cut into pieces or buy chopped watermelon pieces!

Cut up the watermelon ahead of time.

Use kitchen scissors to cut up stacks of mint leaves, or dice them up

Ingredients:

Watermelon - 1 regular or 2 mini seedless

Feta cheese (8 oz or 16 oz, depending on how salty you'd like it!)

Fresh Mint

(Olive oil or avocado oil - optional)

(Redmond's salt - optional)
Instructions:

Chop watermelon up into bite sized chunks or thin slices, put half into a decorative bowl

Sprinkle feta crumbles over the watermelon pieces

Add the rest of the watermelon pieces and top with more feta, drizzle olive oil over if desired ( if your watermelon is already kinda watery you may want to pat dry with a paper towel first or skip the oil, it will taste amazing without the oil) salt if desired!

Chop or cut up fresh mint leaves and sprinkle across the top - enjoy!
